Gelo di melone (6 people)

Melon ice is a typically Sicilian spoon dessert, very fresh and aromatic, in which the watermelon pulp is flavored with jasmine essence and cinnamon. In some versions of the melon gelo it is also possible to find dark chocolate chips or pieces of candied pumpkin. To decorate, generally chopped pistachios are used.
Ingredients:
1 liter of watermelon juice (approximately 4 kg of watermelon)
90 gr. of sugar
80 gr. cornstarch
cinnamon to taste
jasmine aroma (obtained by macerating the jasmine flowers in a little melon juice for an hour)
dark chocolate chips to taste
chopped pistachios

Preparation:
Take the melon pulp, cut it into pieces and remove the seeds.

Pass the melon pieces through the vegetable mill, then filter the juice until you obtain 1 litre.

Sift the starch, pour it into a pan and begin to slowly dilute it with the watermelon juice until you obtain a liquid cream.

*This phase is very important so that no lumps form.

Add the rest of the juice and finally the sugar.

Place the pan on the stove over medium heat and mix thoroughly until the frost thickens (10-15 minutes).

Remove the frost from the heat and pour into a container.

At this point you can flavor the frost to your liking with jasmine and cinnamon aroma.

Leave to cool outside the fridge and only when the melon ice is cold add the chocolate chips.

For this one you can pour the melon ice into the cups and decorate with chopped pistachios and a few jasmine flowers.

Place the ice cream in the fridge for a couple of hours before serving.
