Gelo di limone (4 people)

Gelo di limone does not contain many calories and is a refreshing dessert suitable for hot summer days or as an end to a meal as an alternative to the classic sorbet.
Ingredients:
800 ml of water
250 g of sugar
200 ml of lemon juice
90 g of wheat starch
Preparation:
Filter the juice and pour it together with the water into a pan, mixing it with the sifted wheat starch.

Add the sugar to the mixture, place the pan on the stove over medium heat and mix carefully. As soon as the lemon frost reaches the boiling point and has a viscous consistency, remove it from the heat and leave it to cool.

Once it has become lukewarm, transfer the ice cream to the refrigerator for the time necessary for it to take on more or less the consistency of a pudding and serve cold.

We recommend garnishing with a mint leaf.
